Ingredients
1 small seedless watermelon, cut into 1-inch cubes
2 fresh peaches, thinly sliced
3 Persian cucumbers, sliced into 1/2-inch rounds
1/2 cup fresh feta cheese, cut into 1/2-inch cubes
4 tbsp fresh mint, torn by hand
2 shallots, finely minced
6 tbsp extra virgin olive oil
3 tbsp white balsamic vinegar (substitute for non-alcoholic vinegar)
3 cloves garlic, freshly chopped
1 tsp dried oregano, crushed
Kosher salt and freshly cracked black pepper to taste
Instructions
Combine the cubed watermelon, half of the minced shallots, and the torn mint in a large mixing bowl.
Drizzle with 2 tablespoons of olive oil and season with salt and pepper.
Toss the mixture gently and refrigerate for at least one hour to allow flavors to meld.
After the hour, whisk the remaining 4 tablespoons of olive oil, white balsamic vinegar, remaining shallots, garlic, and crushed oregano together in a small bowl to create a dressing.
Remove the watermelon mixture from the refrigerator.
Add the sliced peaches and cucumber rounds to the watermelon.
Pour the dressing over the fruit mixture and toss gently to coat.
Top with the cubes of feta cheese and serve immediately.
