Ingredients
210g all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
150g caster sugar
1 cup red apple, peeled and diced
2 large eggs
1 tsp vanilla extract
120ml vegetable oil
120ml Greek yogurt
1 tsp ground cinnamon (for topping)
2 tbsp caster sugar (for topping)
1 tbsp melted butter (for topping)
Instructions
Preheat your oven to 180C (350F) and grease an 8-inch round cake pan, lining the base with parchment paper.
In a large bowl, whisk together the flour, baking powder, baking soda, salt, and 150g of caster sugar.
Toss the diced apples into the flour mixture until evenly coated to prevent them from sinking.
In a separate bowl, whisk together the eggs, vanilla, oil, and Greek yogurt.
Combine the wet ingredients into the dry ingredients and stir gently until just incorporated; do not overmix.
Pour the batter into the prepared pan.
In a small bowl, mix the cinnamon, 2 tbsp sugar, and melted butter to create the topping, then sprinkle evenly over the batter.
Bake for 35 minutes or until a toothpick inserted into the center comes out clean.
Cool in the pan for 10 minutes before transferring to a wire rack.
