Ingredients
2 boneless skinless chicken breasts
1/2 teaspoon garlic powder
Black pepper, to taste
3 tablespoons cornstarch
3 tablespoons olive oil
1/2 medium chopped onion (white/pearl onions if unavailable)
2 cups broccoli florets
1/2 red bell pepper
1/2 cup low-sodium chicken broth
2 tablespoons soy sauce
1 tablespoon pure maple syrup
1 teaspoon grated fresh ginger
1 clove minced garlic
Instructions
Preheat oven to 375°F (190°C) for pre-freezing broccoli
Freeze broccoli florets for 15 minutes
Cut chicken breasts into thin strips
Mix 1 tablespoon cornstarch with 1 tablespoon soy sauce in small bowl
Heat 1 tablespoon oil in pan over medium-high heat
