Ingredients
2 pounds sweet potatoes
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon salt
½ teaspoon black pepper
Instructions
Preheat oven to 400°F. Line two rimmed baking sheets with parchment paper.
Peel sweet potatoes and cut into ¼- to ½-inch wide sticks, 3 inches long.
Lay sticks on clean towels. Pat dry with paper towels to remove surface moisture.
In a large bowl, whisk together olive oil, garlic powder, paprika, salt, and black pepper.
Add potato sticks and toss until evenly coated. Spread in single layer on prepared sheets.
