Description

A hearty slow-cooker meal blending gold potatoes, smoked (beef/chicken) sausage, green beans, and butter into a savory, smoky dish. Perfect for hands-off, one-pot cooking with a rich, aromatic flavor profile.


Ingredients

3 lbs gold potatoes, cut into 1.5-inch pieces
1 small onion, chopped
1.5 tbsp olive oil
1 tsp kosher salt
0.5 tsp black pepper, freshly ground
1.5 tsp Cajun seasoning
1 lb smoked sausage (beef or chicken), sliced
1 lb fresh green beans, cut into 2-inch pieces
1 packet onion soup mix (no alcohol/pork)
0.5 tsp garlic powder
0.5 cup butter, cut into pats


Instructions

Place potatoes, sausage, onion, salt, pepper, Cajun seasoning, and olive oil in the slow cooker.
Stir in garlic powder and onion soup mix.
Add butter and mix until evenly distributed.
Cook on LOW for 6–7 hours, stirring occasionally.
During the last 30 minutes of cooking, add green beans to the slow cooker.
Serve warm, with optional cornmeal or rice as garnish.

Notes

Use unsalted butter for better sodium control
Freeze leftovers in airtight containers for up to 3 days
Stir occasionally during cooking for even sauciness
Frozen green beans can be used; drain thoroughly before adding
