A vibrant salad combining sweet strawberries, peppery greens, and creamy feta with a tangy poppy seed dressing. Perfect for casual meals or picnics.
Ingredients
5 oz fresh spinach (baby spinach or arugula)
1 cup strawberries (thinly sliced)
1/3 cup red onion (thinly sliced)
1/2 cup pecans (toasted, or substitute walnuts/almonds)
2 oz feta cheese (crumbled, or substitute goat cheese)
1 recipe poppy seed dressing (Dijon mustard, honey, vinegar, olive oil)
Sea salt (to taste)
Freshly ground black pepper (to taste)
Instructions
Wash and dry spinach thoroughly.
Hull and thinly slice strawberries with a sharp knife.
Peel and thinly slice red onion; soak in cold water for 5 minutes, then drain.
Toast pecans in a dry skillet over medium heat for 3-4 minutes.
In a large bowl, combine spinach, strawberries, and drained red onion.
Drizzle half of the poppy seed dressing over the greens and gently toss.
Add pecans and crumbled feta to the salad.
Season with sea salt and black pepper.
Add remaining dressing as needed and toss again.
Notes
Soak red onion to reduce sharpness
Substitute blueberries for strawberries if preferred
Toast nuts fresh for optimal flavor
Use fresh-ground pepper for enhanced flavor
