Ingredients
3 cups sliced strawberries (fresh or frozen)
3/4 cup granulated sugar
2/3 cup water
1 quart milk (whole, 2%, or non-dairy)
Whipped cream (optional)
Cheesecloth (for straining)
Instructions
In a medium saucepan, combine strawberries, water, and sugar
Heat over medium, stirring to dissolve sugar
Simmer 10-12 minutes until reduced by 1/3
Strain through a cheesecloth-lined bowl, pressing solids
Chill syrup completely
In 8-oz glasses, add 3/4 cup milk and 3-4 Tbsp syrup
Stir until blended
Top with chilled whipped cream if desired
Notes
Use frozen strawberries for optimal sweetness
Avoid over-simmering to maintain vibrant color
Make syrup ahead (stores 5 days refrigerated)
For thicker texture, briefly puree strained syrup
