This hearty spinach soup combines orzo, fresh spinach, and aromatic vegetables in a savory chicken broth for a quick and nutritious meal, perfect for any mealtime.
Ingredients
2 1/2 tbsp butter (unsalted recommended)
1/2 cup chopped celery (1 rib)
1/2 cup chopped scallions (green onions)
1 clove garlic
6 cups chicken broth (low-sodium preferred)
1/2 cup orzo pasta (plain only)
10 oz fresh spinach (no sauté step)
Instructions
Melt butter in a stockpot over medium-low until foam subsides, about 1 minute
Add celery, scallions, and garlic; cook 2 minutes until soft but not browned
Pour in broth and bring to a simmer, adding water if needed
Cook orzo 5 minutes, stirring and breaking up clumps
Stir in spinach and cook 2-3 minutes until wilted
Season with salt just before serving (add pepper at table)
Notes
Use fresh thyme/rosemary for aromatic depth
Cook orzo 1 minute less than package instructions for al dente
Substitute baby spinach for pre-chopped convenience
Add no-chip seasoning to taste
This soup reheats well for leftovers
