Ingredients
1 cup dark brown sugar, packed
1 cup unsalted butter, room temperature
3 large eggs, room temperature
1 3/4 cups cake flour
1 1/2 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground allspice
1/2 tsp freshly grated nutmeg
1/4 tsp ground cloves
1/2 cup cultured buttermilk
2 cups fresh peaches, diced (skin on)
1 tsp coarse sparkling sugar
Instructions
Preheat oven to 350°F (175°C)
Cream butter and brown sugar for 5 minutes until light and fluffy
Beat in eggs one at a time
Whisk together cake flour, baking powder, salt
Add dry ingredients alternately with buttermilk, mixing until just combined
Stir in spices and diced peaches
Pour batter into prepared loaf pan
Sprinkle coarse sugar on top
Bake for 55 minutes until golden and toothpick inserted in center comes out clean
