Ingredients
2 medium sweet potatoes (4 cups, peeled and cut into 1/2-inch chunks)
1 large red onion (2 cups, cut into 1-inch chunks)
1 large red bell pepper (3/4 cup, cut into 1-inch chunks)
13–14 ounces smoked turkey sausage (halal), sliced into coins
1/4 cup olive oil (divided)
1 1/2 tsp paprika (sweet or smoked)
1 tsp ground cumin
1 3/4 tsp chili powder
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
1 tbsp Mike’s Hot Honey (or 1 tbsp honey + 1/2 tsp chili flakes)
1 jalapeño, thinly sliced (optional)
2 oz crumbled feta cheese (optional)
1 large avocado, diced (optional)
Lemon wedges, for serving
Instructions
Preheat oven to 400°F (200°C)
Toss sweet potatoes, red onion, and bell pepper with 2 tbsp olive oil, paprika, cumin, chili powder, garlic powder, onion powder, salt, and pepper on a large sheet pan
Roast for 20 minutes
Add sausage slices to the pan, drizzle with remaining 2 tbsp olive oil, and roast for 10 minutes
Broil for 2-4 minutes to crisp edges and caramelize honey
Garnish with jalapeño, feta, avocado, and lemon wedges
Notes
Substitute butternut squash for sweet potatoes
Use yellow onion or any bell pepper color
Opt for halal-certified turkey sausage
Add fresh garlic (2 cloves) instead of garlic powder if preferred
