Ingredients
2 large English cucumbers, or any crisp cucumber
150g (5oz) Feta cheese, preferably block feta in brine
1/4 cup fresh dill, chopped
2 tbsp fresh chives, chopped
1 handful fresh basil, torn
2 tbsp extra virgin olive oil
2 tbsp fresh lemon juice
Instructions
Wash and slice the cucumbers into bite-sized pieces. You can peel them if you prefer.
Crumble or cube the feta cheese.
In a medium bowl, gently combine the sliced cucumbers, crumbled feta, chopped dill, chopped chives, and torn basil.
In a small separate bowl, whisk together the olive oil and lemon juice to create the dressing.
Drizzle the dressing over the salad ingredients.
Toss gently to combine everything.
Serve immediately.
Notes
For a more substantial salad, consider adding cherry tomatoes, red onion slivers, or Kalamata olives.
If dill or chives are unavailable, fresh parsley or the green parts of scallions can be used as substitutes.
Mint can also be a delightful addition or substitute for basil.
