By using a clever water-pouring method during baking, the cobbler develops a self-saucing, custardy texture that contrasts perfectly with the golden pecan crust. It is an easy-to-assemble crowd-pleaser that brings classic autumnal warmth to your table with pantry-friendly ingredients.
Ingredients
1 cup + 3 tbsp all-purpose flour
2 tsp baking powder
1/2 tsp salt
3/4 cup granulated sugar (divided)
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
1/2 cup pumpkin puree
1/4 cup whole milk
1/4 cup melted butter
1 1/2 tsp vanilla extract
1/2 cup brown sugar
1/4 cup chopped pecans
1 1/2 cups hot water
Instructions
Preheat your oven to 350 degrees Fahrenheit and grease an 8-inch casserole dish.
In a medium bowl, whisk together the flour, baking powder, salt, half of the granulated sugar, cinnamon, nutmeg, and cloves.
Stir in the pumpkin puree, milk, melted butter, and vanilla extract until just combined and spread the batter into the prepared dish.
In a small bowl, combine the remaining granulated sugar, brown sugar, and chopped pecans, then sprinkle this mixture evenly over the batter.
Carefully pour the hot water over the entire top of the dish without stirring.
Bake for 40 minutes, or until the top is set and the edges are bubbling.
Allow to cool for 10 minutes before serving to let the sauce thicken.
Notes
Ensure the water is very hot when pouring to activate the caramelization process correctly. Serve warm, optional with a spoonful of whipped cream or vanilla ice cream.
