Description
A tropical and tangy salad blending rotisserie chicken, pineapple, and toasted almonds with a zesty lemon-Dijon dressing. Ready in 15 minutes, perfect for quick meals or creative lunches.
Ingredients
2 cups chopped rotisserie chicken
1/2 cup crushed pineapple, drained
1/3 cup honey-roasted almonds
2 stalks celery, sliced
1/2 cup finely diced red onion
1/4 cup full-fat mayonnaise
2 tbsp fat-free sour cream
1 tbsp honey
1 tbsp non-alcoholic Dijon mustard
1 tsp lemon juice
1/4 tsp salt
1/8 tsp black pepper
Instructions
In a large bowl, combine chicken, pineapple, almonds, celery, and red onion.
Whisk mayo, sour cream, honey, non-alcoholic Dijon mustard, lemon juice, salt, and pepper in a separate bowl.
Pour dressing over chicken mixture and toss gently to coat.
Serve on croissants or rolls with lettuce, fresh or chilled.
Notes
Use slivered almonds if unavailable
