Ingredients
2 1/4 cups all-purpose flour
1 1/2 tsp baking soda
1 tbsp ground cinnamon
2 tsp ground ginger
1 tsp ground cloves
1/2 tsp ground nutmeg
1/2 tsp salt
1/2 cup packed brown sugar
1/3 cup unsulphured molasses
1 cup butter, softened
1 egg
2 tsp vanilla extract
1/3 cup granulated sugar (for rolling)
Instructions
Preheat oven to 350°F (180°C)
Whisk flour, baking soda, cinnamon, ginger, cloves, nutmeg, and salt in a bowl
Beat softened butter, brown sugar, and molasses until creamy
Add egg and vanilla extract, mix until combined
Gradually add the flour mixture in 2-3 batches, scraping bowl between additions
Chill dough for 1 hour (up to 72 hours)
Roll dough into 1 Tbsp balls, coat in granulated sugar
Place 3″ apart on parchment-lined baking sheets
Bake for 11 minutes, then bang sheets gently to crack surface
Cool on sheets for 1 minute before transferring
