Ingredients
2 1/4 cups all-purpose flour
1 1/2 tsp baking soda

1 1/2 cups granulated sugar (divided)
1 large egg, room temperature
2 tsp non-alcoholic rum extract
2 limes (the zest of)
1 1/2 tbsp fresh mint, finely minced
Instructions
Whisk together the flour, baking soda, and salt in a medium bowl.
Beat the softened butter and 1 cup of the sugar in a large bowl until creamy.
Mix in the egg, non-alcoholic rum extract, lime zest, and minced mint.
Gradually add the dry ingredients to the wet mixture in three batches until just combined.
Chill the covered dough in the refrigerator for at least 30 minutes.
Preheat your oven to 350°F (175°C).
Roll the chilled dough into small balls and coat them in the remaining sugar.
Place balls on a lined baking sheet and bake for 12 minutes or until edges are golden.
