Ingredients
1 large egg
1/2 cup granulated sugar
1/4 cup brown sugar
1/2 cup pure canned pumpkin puree
1/4 cup canola oil
1 teaspoon pure vanilla extract
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon baking soda
1 1/2 teaspoons pumpkin pie spice
1/4 teaspoon salt
3 tablespoons cinnamon sugar mixture (3/4 tsp cinnamon to 1 tbsp sugar)
Instructions
Preheat your oven to 350F and position the rack in the center.
Grease mini loaf pans or brownie wells thoroughly and line with parchment paper strips.
In a large bowl, whisk together the egg, granulated sugar, and brown sugar until smooth.
Add the pumpkin puree, canola oil, and vanilla extract, whisking until well combined.
Sift in the flour, baking powder, baking soda, pumpkin pie spice, and salt.
Mix gently until just combined, being careful not to overmix.
Fill the prepared molds halfway with batter, sprinkle a layer of cinnamon sugar, then top with remaining batter and another dusting of cinnamon sugar.
Use a toothpick to swirl the sugar through the batter.
