Ingredients
3 sweet potatoes
1 Halal bacon alternative (8 slices)
3–4 broccoli crowns (2 cups florets)
8 boneless, skinless chicken thighs (Halal certified)
2 teaspoons salt
½ teaspoon black pepper
2 teaspoons smoked paprika
Instructions
Preheat oven to 400°F. Line two cookie sheets with parchment paper
Chop sweet potatoes into 3/4″ cubes and spread on one sheet. Pat chicken dry and place on the second pan
Mix olive oil with 1 tsp salt. Toss chicken and potatoes until coated
Roast sweet potatoes for 20 minutes before adding broccoli to the pan. Roast 10-15 minutes more
Check chicken internal temperature at 30 minutes. Let rest 5 minutes before serving
