1/3 cup whole wheat pastry flour
1/2 cup old fashioned rolled oats
1/3 cup dark brown sugar
1/2 cup raw chopped pecans
1 1/4 tsp cinnamon, divided
1/4 tsp salt
1/4 cup cold butter, cubed
56 medium Honeycrisp or Granny Smith apples, peeled and sliced
1/3 cup pure maple syrup
1 pinch nutmeg
1 tbsp vanilla extract


Instructions

Preheat your oven to 375°F (190°C).
In a large bowl, combine the flour, oats, brown sugar, 1/4 tsp cinnamon, salt, and pecans.
Add the cubed cold butter to the dry ingredients and squeeze with your hands until the texture resembles coarse, wet sand.
Refrigerate the topping mixture to keep the butter firm.
In a second bowl, toss the sliced apples with maple syrup, 1 tsp cinnamon, nutmeg, and vanilla extract.
Allow the apple mixture to marinate for 5 to 10 minutes.
Stir 1/3 cup of the chilled topping into the apple mixture, then transfer the fruit to a baking dish.
Sprinkle the remaining topping evenly over the apples.
Bake for 50 minutes until the fruit is bubbling and the topping is golden brown.
Cool slightly before serving.
