Ingredients
Lean ground beef, 1 lb
Chili powder, 1 tsp
Garlic powder, 1 tsp
Onion powder, 1/2 tsp
Paprika, 1 tsp
Cumin, 1 tsp
Salt, 1/2 tsp
Cayenne pepper, 1/2 tsp
Red bell pepper, 1 small
Green bell pepper, 1 small
Tomato paste, 2 tbsp
Uncooked rice, 1.5 cups
Black beans, 1 can (15 oz)
Corn kernels, 1 can (15 oz)
Fresh cilantro, 1/4 cup
Jalapeño pepper, 1 small
Avocado, 1
Lime wedges, for serving
Cucumber, 1/2 cup, diced
Mayonnaise, 1/4 cup
Lime juice, 2 tbsp
Instructions
Heat oil in a large skillet over medium heat.
Add ground beef and cook until browned and no longer pink.
Stir in chili powder, garlic powder, onion powder, paprika, cumin, salt, and cayenne pepper; mix well.
Add chopped red and green bell peppers and 1 tbsp water; cook 5-7 minutes until softened.
Combine tomato paste with 2 tbsp water to make a paste and mix into the beef-pepper mixture; cook 2-3 minutes.
Cook rice according to package instructions.
Drain and rinse black beans, then add to a bowl with drained corn.
For the jalapeño cilantro sauce: combine mayonnaise, lime juice, and chopped jalapeño in a blender; puree smooth.
Assemble the bowl by layering rice, beef mixture, black beans-corn, diced cilantro, and sauce.
Top with diced cucumber and avocado slices; serve with lime wedges.
Notes
Substitute ground turkey or chicken for beef to reduce fat.
Use 2 cloves fresh garlic instead of garlic powder.
Omit onion powder if using fresh onion.
Add chipotle powder for smokier heat.
Use poblano pepper instead of green bell pepper for richer flavor.
Sauce can be store-bought if preferred (ensure no alcohol/animal products).
