Ingredients
Medium peaches (freestone) 2
Olive oil or melted butter 1 teaspoon
Honey 3 tablespoons
Lemon juice 2 tablespoons
Vanilla extract 1 teaspoon
Cinnamon ½ teaspoon
Lemon zest to garnish
Whipped coconut milk or cream/yogurt/ice cream 1 cup
Instructions
Preheat the grill on low to medium heat. Brush the grill with a thin layer of olive oil to prevent sticking.
Wash and dry the peaches. Cut through the center, and twist the halves to remove the pit. Gently lift the pit out with a spoon. Avoid peeling the peaches.
Brush the cut sides of each peach half with a small amount of olive oil.
Place the peaches cut side down on the preheated grill. Grill for 4–6 minutes or until grill marks form. Remove and transfer to a serving plate.
In a small bowl, combine honey, lemon juice, vanilla extract, and cinnamon to create the drizzle. Warm slightly if needed.
Spoon the honey mixture over the grilled peaches just before serving. Garnish with lemon zest and a dollop of whipped coconut milk or desired topping.
Notes
Use ripe but firm peaches for optimal texture. Adjust sweetness by adding more honey to taste. Substitute whipped coconut milk with whipped cream, Greek yogurt, or vanilla ice cream for variations.
