Description
A customizable, healthy Mexican dish with tender grilled chicken strips, smoky bell peppers, and savory onions marinated in zesty lime and southwest spices. Rival restaurant-quality with easy prep and no undercooked meat or soggy fillings.
Ingredients
2 tbsp olive oil
2 limes, juiced
2 tbsp fajita seasoning
1 lb chicken breasts, ½” thick
2 red bell peppers
1 yellow bell pepper
1 green bell pepper
1 large onion, quartered
8–10 flour tortillas
Instructions
Combine 2 tbsp olive oil, 2 tbsp lime juice, and 2 tbsp fajita seasoning in a bowl
Whisk until emulsified and seasonings are fully incorporated
Place chicken breasts in a zipper-top bag and pour marinade over them. Seal and shake to coat
Chill chicken for 20 minutes while preparing veggies
Grill chicken over indirect heat for 6–8 minutes per side until cooked through
Remove cooked chicken and transfer to separate bowl
Add quartered onion and sliced bell peppers to the marinade leftover in the bag. Marinate 5 minutes then grill for 5–7 minutes until tender and charred
Warm tortillas on the grill or in the oven. Slice chicken into 1″ strips against the grain
Assemble fajitas in tortillas and serve with salsa, guacamole, or optional toppings
Notes
Use avocado oil for higher heat resistance when grilling
Substitute red/yellow peppers for milder flavor if desired
Avoid sweet onions in winter months for optimal sharpness
