Ingredients
Extra virgin olive oil
Lemon juice (½ lemon)
Dijon mustard (1 tsp)
Garlic powder
Oregano
Lemon zest
Salt
Black pepper
Unsalted butter
Garlic cloves (12 minced)
Large or jumbo shrimp (1–1½ lbs, peeled and deveined)
Parmesan cheese (grated)
Parsley (fresh, chopped)
Instructions
Whisk olive oil, lemon juice, mustard, garlic powder, oregano, lemon zest, salt, and pepper in a bowl.
Add shrimp and mix well; refrigerate for 30 minutes–4 hours.
Thread shrimp onto skewers, 2–3 per skewer.
Preheat grill to 400°F and cook skewers 4 minutes per side until opaque.
Whisk butter, minced garlic, Parmesan, parsley, additional lemon juice, salt, and pepper until smooth.
Baste skewers with butter sauce during the last 2 minutes of grilling.
Notes
Pat shrimp dry before marinating to prevent sogginess
Use stainless steel skewers for even heat transfer
