Ingredients
Beef steak 1 to 1 1/4 lb (Top sirloin, tri-tip, ribeye, or strip)
Kosher salt 3/4 tsp (Use table salt if unavailable)
Black pepper 1/2 tsp (Freshly ground preferred)
Unsalted butter 3 Tbsp (Divided for cooking and sauce)
Garlic 4–6 cloves (Chopped for maximum contact)
Parsley (optional) 1 Tbsp (Finely chopped for garnish)
Instructions
Cut steak into 1 1/2-inch pieces
Pat dry with paper towels
Sprinkle 3/4 tsp salt and 1/2 tsp pepper
Heat 12-inch stainless steel or cast iron pan over medium (3 mins)
Add 1 Tbsp butter until sizzling
Cook steak in single layer with 1/2-inch spacing
Don’t move steak for 3 minutes
Flip with tongs, cook 2-3 mins for 140°F
Transfer to dish while oil still glistens
Reduce heat to medium-low
Melt remaining 2 Tbsp butter with garlic
Cook 2 mins until fragrant (blonde color)
Return steak to pan, toss to coat
Transfer to platter
Sprinkle optional parsley before serving
Notes
Strain garlic butter to remove fibrous texture for smoother coating
Room temperature beef ensures even cooking
