Description

These no-bake frozen yogurt bark cookies are a light and refreshing dessert or snack. Packed with protein and antioxidants, they are easy to make and perfect for customization with your favorite fresh fruits.


Ingredients

2 cups Greek yogurt, plain and full-fat
1 tbsp vanilla extract (or almond extract)
2 cups chopped fruit (e.g. apple-honey, berry-cherry, or pineapple-mango)
12 tbsp honey or maple syrup (optional, to taste)


Instructions

Mix Greek yogurt with vanilla extract in a bowl until smooth. Add honey or maple syrup if using tart or unseasoned fruit.
Line a 9×9-inch baking dish with parchment paper and pour the yogurt mixture into it. Use a spatula to press it flat and smooth the top.
Evenly scatter chopped fruit over the yogurt and gently press to ensure the fruit adheres.
Freeze for 3–4 hours until the mixture is solid. Use a bench scraper or sharp knife to cut into 12 rectangles and serve.

Notes

Use room temperature yogurt to avoid ice crystals.
Freeze on a baking sheet first for even solidification.
Winter fruits like pears should be pre-cooked with lemon juice to avoid sogginess.
For a softer bite, let the cookies thaw slightly before serving. Do not microwave.
