Description

A refreshing no-bake summer treat made with fresh watermelon, a glossy dark chocolate drizzle, and delicate rose petals. Hydrating, naturally sweet, and easy to make, these popsicles are perfect for satisfying sweet or savory cravings with minimal effort.

Ingredients

Scale

4 cups chopped small seedless watermelon
1/3 cup dark chocolate chips
12 teaspoons coconut oil
1/2 tsp flaked sea salt (preferably pickled salt)
1 tbsp dried rose petals (food-safe, organic)

Instructions

Cut watermelon into 64 uniform triangles (about 8 cubes per pop)
Insert popsicle sticks halfway into each watermelon piece
Place on a wire rack set over parchment-lined baking sheet
Microwave chocolate chips and coconut oil in 20-second intervals, stirring until fully melted
Drizzle melted chocolate over watermelon pieces in zigzag patterns
Sprinkle 1/4 tsp sea salt and 1/2 tbsp rose petals immediately
Freeze for 1 hour, then transfer to a sealed container with paper towels between layers to prevent sticking

Notes

Use chill-treated equipment for smoother chocolate coating
Fresh rose petals (edible) can be used in place of dried if frozen first
Rose petal-infused sugar can be substituted for extra floral flavor
Store up to 7 days in freezing conditions
