Ingredients
Naan flatbread, 2 large (6-8″) (Use store-brand or Stonefire)
Pizza sauce, 1/2 cup (adjust to taste) (Cut with 1 Tbsp water for spreading)
Part-skim mozzarella, 6 oz (Fresh style melts best)
Rotisserie chicken, 1 small (3-4 lbs) (Pull meat or dice)
Spinach, 1 cup chopped (Use frozen thawed as alternative)
Onion, 1 medium (Shallots or red onion work)
Olive oil, 1/2 Tbsp (Extra virgin preferred)
Instructions
Preheat oven to 350°F
Place flatbreads on baking sheet/stone
Spoon pizza sauce evenly over surfaces
Heat 1/2 Tbsp oil in skillet
Add onion slices, sauté until translucent (5 min)
Pull chicken meat from bones
Spread mozzarella over sauce layer
Top with chicken, onions, and spinach
Optional: Add sliced tomatoes
Oven bake 5-7 minutes
Cheese should be fully melted
Cut and serve immediately

Don’t skip pre-sautéing onions: ensures tender texture
Use pre-cooked chicken for convenience
Frozen spinach works well if fresh is unavailable
