Ingredients
Tahini ¼ cup
Olive oil 1 TBSP
Lemon juice 2 TBSP
Garlic 1 clove
Water 3 TBSP
Falafel Patties 16–20 pieces
Flatbread 4 large
English cucumber ½ long
Tomatoes 2 medium or 1 cup
Green leaf lettuce 1 small bunch
Pickled onions ½ cup
Hummus ½ cup
Herbs (Parsley & cilantro)
Instructions
Mix tahini, olive oil, lemon juice, crushed garlic, and water in a bowl until smooth.
Toast flatbread on a hot pan or oven until lightly browned.
Evenly divide hummus between warm pita halves.
Layer falafel pieces, sliced cucumbers, diced tomatoes, fresh lettuce, and pickled onions onto sandwiches.
Toss herbs if using fresh, and sprinkle over toppings.
Drizzle tahini sauce generously before serving.
Notes
Use runny tahini for smoother sauce. Thin sauce gradually by adding water. For gluten-free option, substitute gluten-free pita. Replace pickled onions with fresh raw onions. Let hummus rest for 5 minutes for ideal consistency. Adjust falafel quantity to preference.
