Description

Crispy, golden air fryer potatoes with a fluffy inside, made with pantry staples and ready in 25 minutes. A versatile side dish perfect for any meal.

Ingredients

Scale

2 lbs (4 medium) white skinned potatoes (Yukon Gold or Russet, no peel)
2 tablespoons olive oil (or avocado oil)
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon salt (adjust to taste)
½ teaspoon black pepper (freshly ground preferred)
1 tablespoon dried rosemary (crush between fingers)
¼ cup parmesan cheese (optional, sprinkle during last 5 minutes)
½ medium lemon (optional, for juice and zest)

Instructions

Preheat the air fryer to 400°F for 3 minutes
Scrub and dry potatoes; dice into ½-¾-inch cubes
In a bowl, toss potatoes with olive oil until evenly coated
Add garlic powder, paprika, salt, pepper, rosemary, and lemon juice; mix well
Arrange potatoes in a single layer in the air fryer basket (work in batches if needed)
Air fry for 15-20 minutes, shaking halfway through
Sprinkle parmesan (if using) during the last 5 minutes of cooking

Notes

No soaking or flipping required
Use a sharp knife for even cube size
Kosher salt sticks better to potatoes
Lemon zest enhances flavor; omit if serving with ketchup
Store in an airtight container at room temperature for up to 4 days or freeze for up to 3 months; reheat in air fryer until golden
