Ingredients
12 ounces white chocolate (finely chopped)
1/4 cup heavy cream
1–2 large lemons (zested)
1/3 cup confectioners’ sugar (for dusting)
Instructions
Place chopped white chocolate in a heat-proof bowl.
Simmer one inch of water in a saucepan over medium-low heat.
Pour the heavy cream over the chocolate and place the bowl over the simmering water.
Stir steadily until about half of the chocolate is melted.
Remove from heat and continue stirring until the mixture is completely smooth.
Stir in the fresh lemon zest.
Cover the surface with plastic wrap and refrigerate for 1-2 hours until firm.
Scoop tablespoon-sized portions and roll into balls using your hands.
Lightly dust each finished truffle with confectioners’ sugar before serving.
Notes
Ensure high-quality white chocolate is used for the best texture. Use a microplane for fine lemon zest to avoid bitter pith. Store these in the refrigerator in an airtight container for up to one week.
