Ingredients
1 English cucumber
2–3 large ripe tomatoes
½ medium red onion
1 tbsp fresh herbs (basil, parsley, or dill)
2 tbsp olive oil
1 tbsp red wine vinegar
Salt and black pepper to taste
Instructions
Cut English cucumber into half-moon slices
Dice tomatoes, removing excess juice
Thinly slice red onion
Chop fresh herbs
Combine all ingredients in a large bowl
Pour olive oil and vinegar over vegetables
Toss gently to coat evenly
