1 pound dried orzo pasta
3 cups low-sodium chicken broth
2 cups whole milk
5 ounces fresh baby spinach
1 tablespoon olive oil
1 teaspoon Italian seasoning
Salt and black pepper to taste


Instructions

Prepare the vegetables by dicing the onion, mincing the garlic, and slicing the sun-dried tomatoes.
Pat the shrimp dry and season with a pinch of salt.
Heat olive oil in a large Dutch oven over medium-high heat.
Sauté the onion for 3 minutes until softened.
Add the garlic, sun-dried tomatoes, orzo, Italian seasoning, salt, and pepper; stir for 1 minute.
Pour in the chicken broth and milk, bringing the mixture to a gentle boil.
