Ingredients
1 ½ pounds chicken thighs (boneless, skinless)
1 ½ cups chicken broth (low-sodium)
3 tbsp olive oil
1 tbsp Dijon mustard
¼ tsp salt
3 cloves garlic (minced or pressed)
1 tbsp lemon zest
2–3 tbsp lemon juice
½ cup heavy cream
1 tbsp fresh parsley (optional garnish)
Instructions
Marinate chicken thighs in olive oil, minced garlic, lemon zest, and Dijon mustard in a bowl for 20 minutes
Heat 1 tbsp olive oil in a skillet over medium-high heat until 375°F (use a thermometer). Sear chicken for 5–6 minutes per side until golden; transfer to a plate
Deglaze skillet with chicken broth, scraping browned bits. Simmer for 3 minutes
Whisk in remaining olive oil, lemon juice, salt, and cream. Return chicken to skillet, cover, and cook 5–8 minutes until chicken reaches 160°F
Garnish with parsley before serving
