Description
A tender chicken casserole with sweet balsamic glaze and melted mozzarella. Tangy, savory, and creamy in one pan.
Ingredients
Skinless chicken breasts (6) or boneless thighs
Olive oil (2 tablespoons) for searing
Dried oregano (1 teaspoon) or 1 Tbsp fresh
Dried basil (1 teaspoon) or 1 Tbsp fresh
Salt (1 teaspoon) to taste
Pepper (1/4 teaspoon) freshly ground
Garlic cloves (8), minced (about 2 Tbsp)
Cherry tomatoes (3 cups) halved
Balsamic vinegar (1/2 cup)
Brown sugar (2 tablespoons)
Fresh shredded mozzarella (1 1/2 cups) low-moisture optional
Instructions
Preheat oven to 425°F (220°C)
Place chicken in baking dish, drizzle with olive oil
Season chicken with half the garlic, oregano, basil, salt, and pepper
Rub seasoning onto all surfaces of chicken
Arrange halved cherry tomatoes around chicken in dish
Whisk balsamic, brown sugar, and remaining garlic in bowl
Pour glaze over chicken, flip each breast to coat both sides
Bake covered 25 minutes until chicken is almost done
Uncover, top with mozzarella, and broil 3-5 minutes until golden
Notes
Substitute thighs for breasts with longer baking time
Use gluten-free mozzarella if needed
Glaze flavors deepen after 24-hour rest
