Ingredients
Vanilla Protein Powder, 45g
Oat Flour, 30g
Coconut Flour, 8g
Brown Sugar Substitute, 20g
Light Butter, 28g (2 Tbsp)
Sugar-Free Syrup, as needed
Greek Yogurt
Vanilla Extract, 1 tsp
Cool Whip
Chocolate Chips, 10g
Instructions
Combine the dry ingredients in a bowl: vanilla protein powder, oat flour, coconut flour, and brown sugar substitute.
Add melted light butter, sugar-free syrup, and 1 tsp vanilla extract until a dough forms. Avoid overmixing.
In a separate bowl, combine 2 cups Greek yogurt, 1 tsp vanilla extract, and Cool Whip until smooth.
Roll one-third of the cookie dough into 12 small balls.
Fold in 10g chocolate chips and the dough balls into the yogurt base gently.
Pour the mixture into popsicle molds and freeze for 3–4 hours.
Notes
Use room-temperature Greek yogurt for a smoother base; 5 minutes in the microwave can help.
Chill the popsicle molds for 10 minutes before filling to prevent melting during freezing.
Add crushed nuts or shredded coconut for extra texture.
Freeze for 5 minutes before unmolding for a cleaner release.
Hydrate coconut flour before mixing as it can be very absorbent.
