Description
Crispy, cheesy hand-held pockets filled with seasoned shredded chicken and melted Mexican cheese, coated in a zesty mayonnaise-spiced sauce for a quick and flavorful Mexican fusion appetizer.
Ingredients
1 cup mayonnaise
½ tsp taco seasoning
¼ tsp garlic salt
2 tsp hot sauce
6 flour tortillas
2 cups Mexican cheese (Oaxaca or Monterey Jack)
2 cups shredded cooked chicken breast
Instructions
Whisk mayonnaise, taco seasoning, garlic salt, and hot sauce in a medium bowl until smooth
Dip one tortilla side into the mayonnaise mixture, ensuring even coating without dripping
Sprinkle ¼ cup shredded chicken and ⅓ cup cheese evenly in the center
Top with a second tortilla, mayonnaise side down, forming a sealed square
Microwave for 20 seconds to soften tortillas
Heat in a nonstick skillet over medium-low until golden, 3-4 minutes per side
Cut each tortilla into 2 triangles for serving
Brush remaining sauce directly on crisped bites
Arrange on parchment paper while browning remaining pockets
Notes
Use chilled tortillas to prevent sticking during assembly
Don’t overfill to maintain proper folding and cooking
Preheat skillet for at least 1 minute for even browning
Substitute taco seasoning with adobo sauce for a smoky flavor
Use light mayonnaise for lower fat
Replace garlic salt with onion salt if preferred
