Pickle brine, splashes
Red onion, 1/4 cup, thinly sliced and soaked in cold water
Hoagie rolls (sesame seeded if available), 4 rolls
Butter, 4 tablespoons, for toasting
Mayonnaise, 1 1/4 cups, full-fat
Apple cider vinegar, 2 tablespoons
Dijon mustard, 1 tablespoon
Brown sugar, 2 teaspoons
Creamy horseradish, 2 teaspoons
Lemon juice, fresh, 2 teaspoons
Worcestershire sauce, 1 teaspoon (halal-certified if needed)
Hot sauce, 2 teaspoons
Cayenne pepper, 1 teaspoon


Instructions

Place fried chicken tenders on a cutting board and chop into bite-sized pieces
Add chopped dill pickles, a splash of pickle brine, and half the red onion (soaked and drained) to the chicken
Chop until mixture is finely textured and evenly combined
In a bowl, whisk mayonnaise, apple cider vinegar, Dijon mustard, brown sugar, horseradish, lemon juice, Worcestershire sauce, hot sauce, and cayenne pepper to make Alabama BBQ sauce
Toast hoagie rolls using butter until golden brown
Toss chopped chicken mixture with remaining sautéed or raw red onion and Alabama BBQ sauce until lightly coated
