Description

Start your morning right with these satisfying, handheld breakfast burritos. Featuring a perfect contrast between golden, crispy hash browns and fluffy, creamy scrambled eggs wrapped in warm flour tortillas, this meal is both hearty and nutritious. Enhanced with savory turkey bacon and fresh avocado slices, these burritos are the ideal premium alternative to a drive-thru breakfast, keeping you energized and full throughout your busy day.

Ingredients

Scale

8 slices turkey bacon
16 oz frozen hash browns, thawed
8 large eggs
1/3 cup whole milk
4 tbsp unsalted butter
Kosher salt to taste
Black pepper to taste
4 large flour tortillas
1/2 cup sharp cheddar cheese, shredded
1 ripe avocado, thinly sliced
Hot sauce to taste

Instructions

Cook turkey bacon in a large skillet over medium heat until crispy, about 8 minutes.
Drain bacon on paper towels and set aside.
Fry hash browns in the same skillet until golden and crispy, then remove and set aside.
In a medium bowl, whisk eggs and milk until well combined.
Wipe out the skillet, add butter, and pour in the egg mixture over medium-low heat.
Stir gently until eggs are fluffy and just set.
Briefly warm the flour tortillas in a microwave or dry skillet to ensure they are pliable.
Assemble each burrito by layering eggs, hash browns, turkey bacon, cheddar cheese, and avocado in the center of a tortilla.
Season with hot sauce if desired, fold in the sides, and roll tightly.
Serve warm.

Notes

Ensure hash browns are fully thawed and patted dry before frying to achieve the best crunch. Warming the tortillas before assembly is key to preventing them from cracking during the rolling process. You can store leftover assembled burritos by wrapping them individually in foil and refrigerating for up to 2 days.
