Chili powder 2 tsp
Ground cumin 2 tsp
Smoked paprika 1 tsp
Garlic powder 1 tsp
Salt 1 tsp
Black pepper ½ tsp
Ground beef chuck 1 lb
Water 3 Tbsp
Cooking oil 1 Tbsp
Green bell pepper 1
Red/white onion 1 small
Cilantro 2 Tbsp
Lime 1
Flour tortillas 8


Instructions

In a small bowl, mix chili powder, cumin, paprika, garlic powder, salt, and black pepper
Transfer seasoning to a labeled jar for storage
Heat skillet over medium-high heat
Add ground beef chuck and cook until browned (8-10 minutes)
Drain excess fat and return meat to skillet
Add seasoning mix and water, stir to combine
Remove beef and set aside
Add oil to skillet, sauté pepper and onion until tender (5-7 minutes)
Return beef and any juices to skillet, cook 2-3 minutes
Stir in chopped cilantro
Warm tortillas in microwave or on stovetop
Squeeze lime juice over mixture
Serve ½ cup filling per tortilla

Notes

Use any bell pepper color
Substitute parsley for cilantro if needed
Try whole wheat tortillas or lettuce wraps for variation
