Ingredients
2 boneless chicken breasts, cut into 1-inch cubes
3 green peppers
3 red peppers
1 large onion
10–12 wooden skewers
¼ cup chili powder
1 tbsp paprika
½ tsp ground thyme
2 tsp salt
2 tsp garlic powder
2 tbsp brown sugar
2 tbsp olive oil
Instructions
Soak wooden skewers for 30 minutes; drain without drying
In a mixing bowl, combine chili powder, paprika, thyme, salt, garlic powder, and brown sugar. Add chicken cubes and toss to coat
Alternate chicken, peppers, and onions on each skewer. Brush each with 1 tsp olive oil
Preheat grill to 400°F. Brush grates with 1 tbsp olive oil to prevent sticking
Grill skewers for 10-12 minutes, rotating every 2-3 minutes. Check for 165°F internal temperature
Let skewers rest for 5 minutes before serving
Notes
Pre-char vegetables on the grill for 30 seconds before threading to enhance grilled flavor
Use olive oil-resistant plastic wrap to shape chicken breasts into uniform cubes
Brush skewers with 1 tbsp melted halal ghee during last 2 minutes for a shiny finish
