Ingredients
Chili powder ¼ cup
Paprika 1 tablespoon
Ground thyme ½ tsp
Garlic powder 2 tsp
Cumin 1 tsp
Green/red peppers 3 each
Salt 1 tsp
Black pepper ½ tsp
Cayenne pepper ¼ tsp
Onions 2 medium
Olive oil 2 tbsp
Instructions
Combine chili powder, paprika, thyme, salt, garlic, black pepper, cumin, and cayenne in a bowl
Cut chicken into 1½” cubes and mix with spice blend
Marinate for 10 minutes at room temperature
Cut peppers and onions into 1½” pieces
Alternate chicken, peppers, and onions on soaked skewers
Brush skewers with 1 tbsp olive oil before grilling
Preheat grill to 200°C (400°F) and cook 5 minutes per side
Brush with remaining oil during grilling
Use a meat thermometer to ensure chicken reaches 165°F
