A classic American dessert with a buttery, flaky crust and a spiced apple filling. Pre-cooking the apples prevents sogginess and enhances flavor, while the lattice top offers both presentation and structural integrity.
Ingredients
Pie crust (or All Butter Pie Crust) (2 discs)
10 cups apple slices (1/4-inch thick) (About 8 large apples; use a mix of Granny Smith and Honeycrisp)
1/2 cup granulated sugar (or packed brown sugar)
1/4 cup all-purpose flour (spoons and leveled)
1 Tablespoon lemon juice
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg (freshly grated is best)
1 egg + 1 Tablespoon milk (for egg wash)
Coarse sugar (optional, for sprinkling)
Instructions
Prepare either pie crust recipe through step 5. Refrigerate the dough for at least 2 hours before rolling.
In a large pot, toss apple slices with granulated sugar, flour, lemon juice, cinnamon, allspice, and nutmeg. Cook over medium heat until slightly tender and juices are syrupy, then set aside to cool.
Roll out one disc of dough into a 13-inch circle. Transfer to a 9-inch pie dish, pressing into the base and sides. Chill the crust while preparing the second disc.
Fill cooled pie crust with apple mixture. Roll out the second disc and cut into lattice strips. Arrange over the pie, tucking seams.
Whisk egg with milk and brush over lattice. Sprinkle with coarse sugar if desired. Bake at 425°F for 15 minutes, then reduce to 375°F and bake 60-70 minutes until golden.
Cool completely for 3 hours before slicing to set the filling.
Notes
Store-bought crust is a valid shortcut for easier preparation.
Mix tart and sweet apples for balance.
Pre-cooking filling is critical to avoid a runny pie.
Sprinkling coarse sugar is optional but adds appealing texture.
