Water ¼ cup

Instructions
Preheat oven to 425°F (220°C)
Cut each apple into ⅛-inch slices, removing cores
Melt butter in saucepan, stir in flour to form roux
Add sugars and water, bring to boil then simmer 3-5 minutes
Press one pastry into 9-inch pie pan
Cut remaining pastry into 1-inch strips
Lay four vertical strips spaced evenly over filling
Fold first and third strips back, add horizontal strip
Unfold verticals, repeat with second/fourth strips
Trim excess pastry, pinch edges to seal
Pour caramel over lattice, avoid underfilling
Bake 15 minutes at 425°F, then 35-45 minutes at 350°F
