Ingredients
1 1/2 cups all-purpose flour
2 tbsp all-purpose flour (for coating apples)
1/2 cup brown sugar (for batter)
1/3 cup brown sugar (for streusel)
2 Granny Smith apples, peeled, cored, and chopped
1/2 cup sour cream
1/3 cup butter, melted (for batter)
1/4 cup plus 3 tbsp butter, softened (for streusel)
2 large eggs
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1/4 cup milk
1 tsp vanilla extract
1/4 cup chopped pecans (optional for streusel)
Instructions
Preheat oven to 350°F and grease a 9×5-inch loaf pan, lining with parchment paper.
Combine softened butter, 1/3 cup brown sugar, 2 tbsp flour, cinnamon, nutmeg, and pecans in a bowl to create a coarse streusel topping.
In a separate bowl, toss chopped apples with 2 tbsp flour to coat, ensuring they stay suspended in the batter.
Whisk remaining 1 1/2 cups flour, baking powder, baking soda, spices, and salt.
In another bowl, mix eggs, sour cream, melted butter, milk, sugar, and vanilla until smooth.
Combine wet and dry ingredients just until moistened, then fold in the coated apples.
Pour batter into the pan and sprinkle the streusel mixture evenly over the top.
Bake for 55 minutes or until a toothpick inserted into the center comes out clean.
Cool in the pan for 10 minutes before transferring to a wire rack.
Notes
Ensure all ingredients are at room temperature for the best batter texture. Lining the pan with parchment paper is highly recommended for easy removal. Store at room temperature in an airtight container for up to 3 days or freeze for up to 1 month.
