0.25 cup granulated sugar

0.5 cup no-sugar added applesauce
1.5 cups Honeycrisp apples, peeled and finely diced
2 cups powdered sugar
0.33 cup + 2 tbsp apple cider


Instructions

Preheat your oven to 400 F and coat a large baking sheet with nonstick cooking spray.
Whisk the flour, baking powder, salt, and cinnamon in a medium-sized bowl.
Combine the melted butter, sugar, egg, vanilla, and applesauce in a separate large mixing bowl until smooth.
Fold the dry ingredients into the wet mixture, then gently stir in the diced apples.
Drop tablespoon-sized scoops of batter onto the prepared baking sheet.
Bake for 15 minutes or until the bites are golden and set.
Whisk together the powdered sugar and apple cider to create a thin glaze.

Notes

Ensure your apples are finely diced so they cook through evenly. If you prefer a thicker glaze, start with less apple cider and add more as needed. Store in an airtight container at room temperature for up to 3 days.
