Ingredients
2 cups all-purpose flour

1 cup granulated sugar (plus 0.25 cup for topping)
2 large eggs, room temperature
2 teaspoons pure vanilla extract
0.5 cup whole milk
Instructions
Preheat your oven to 375 degrees F and grease a standard 12-cup muffin tin.
Sift together the flour, baking powder, salt, and 2 teaspoons of the cinnamon in a medium mixing bowl.
In a separate bowl, toss the diced apples with the remaining 0.5 teaspoon of cinnamon and a tablespoon of flour.
