6 Fuji or Honeycrisp apples, chopped into bite-sized pieces
1 tbsp Ceylon cinnamon
1 pinch sea salt
1 tbsp + 2 tsp coconut oil, divided
2/3 cup rolled oats
2/3 cup pecans
2 tsp honey
1 tbsp water


Instructions

Preheat your oven to 180C (350F).
In a large pan, sauté the chopped apples with 2 tsp of coconut oil, cinnamon, and a pinch of salt over medium-high heat.
Cover the pan for 2 to 3 minutes to help the apples soften.
While apples cook, combine oats, pecans, 1 tbsp coconut oil, honey, and water in a food processor.
Pulse the ingredients until they reach a coarse, crumbly consistency.
Transfer the softened apples into a small baking pan lined with parchment paper.
Squeeze the crumble mixture into large clumps and distribute them evenly over the apple layer.
Bake for 15-20 minutes until the top is golden brown and crispy.

Notes

You can swap honey for maple syrup if desired. Walnuts or almonds make excellent substitutes for pecans. Ensure your oats are certified gluten-free if you have a sensitivity.
