4 medium-large Russet potatoes, sliced into 1/2-inch sticks (or Yukon Gold)
2 tablespoons olive oil (avocado oil or melted coconut oil)
1 teaspoon kosher salt (sea salt, adjust to taste)
1 teaspoon paprika (sweet, hot, or smoked; optional cayenne for heat)
4 tablespoons unsalted butter
4 garlic cloves (minced or grated; substitute 1 tsp garlic powder)
1/2 cup freshly grated Parmesan cheese
Fresh parsley, for garnish


Instructions

1. Soak potato sticks in cold water for 30 minutes. Drain and pat completely dry.
2. Whisk olive oil, salt, and paprika in a bowl. Add potatoes and toss to coat.
3. Preheat air fryer to 380°F for 5 minutes. Add a single layer of potatoes (cook in batches if needed).
4. Air fry for 10 minutes. Shake the basket, then fry for another 4-6 minutes until golden.
5. Immediately transfer fries to a bowl. Melt butter with garlic; toss fries until covered. Sprinkle with Parmesan.
6. Garnish with parsley and serve warm.

Notes

Soaking removes starch for crispiness; skip only in a rush.
For vegan: use melted vegan butter and omit Parmesan.
