  • 1 tablespoon avocado oil – for high-heat searing
  • 3 tablespoons butter, divided – adds richness and helps in basting
  • 2 large garlic cloves, minced – aromatic and flavorful base for sauce
  • 1 cup heavy cream – creates a silky smooth sauce
  • 2 ounces freshly grated parmesan cheese – melts perfectly for a creamy texture
  • Salt and freshly ground black pepper – enhances all flavors
  • Fresh parsley, chopped – optional garnish for color and freshness

Instructions

  1. Cook pasta in salted boiling water until al dente. Reserve 1 cup of pasta water and drain.
  2. Pat steaks dry and season with salt and pepper. Heat avocado oil in a skillet over medium-high heat until hot.
  3. Sear steaks on each side until a golden crust forms (3–5 minutes per side). Lower heat, add 1 tablespoon butter, and baste the steak with melted butter until medium-rare (130–135°F).
  4. Remove steaks from the pan and let rest for 5–10 minutes before slicing against the grain.
  5. In the same skillet, melt remaining butter. Add garlic and sauté until fragrant (about 30 seconds).
  6. Pour in heavy cream and simmer gently for 2–3 minutes, scraping up browned bits from the pan.
  7. Whisk in parmesan cheese until melted and smooth. Adjust thickness with reserved pasta water as needed.
  8. Toss cooked pasta into the sauce, coating evenly. Season with salt and pepper.
  9. Top with sliced steak, sprinkle with more parmesan and parsley, and serve warm.
