Instructions
- Cook pasta in salted boiling water until al dente. Reserve 1 cup of pasta water and drain.
- Pat steaks dry and season with salt and pepper. Heat avocado oil in a skillet over medium-high heat until hot.
- Sear steaks on each side until a golden crust forms (3–5 minutes per side). Lower heat, add 1 tablespoon butter, and baste the steak with melted butter until medium-rare (130–135°F).
- Remove steaks from the pan and let rest for 5–10 minutes before slicing against the grain.
- In the same skillet, melt remaining butter. Add garlic and sauté until fragrant (about 30 seconds).
- Pour in heavy cream and simmer gently for 2–3 minutes, scraping up browned bits from the pan.
- Whisk in parmesan cheese until melted and smooth. Adjust thickness with reserved pasta water as needed.
- Toss cooked pasta into the sauce, coating evenly. Season with salt and pepper.
- Top with sliced steak, sprinkle with more parmesan and parsley, and serve warm.
