Instructions
- In a small saucepan, bring the heavy cream to a gentle simmer over medium-low heat.
- Pour the hot cream over the chopped chocolate in a bowl and cover with plastic wrap. Let it sit for 10 minutes to melt the chocolate.
- Add the vanilla extract and stir until smooth and glossy. Allow to cool at room temperature for 30–60 minutes.
- Using an electric mixer, beat the mixture at medium speed until thick and slightly lighter in color.
- If too soft to roll, spread in a shallow dish and refrigerate until firm but scoopable (about 1–2 hours).
- Using a melon baller or small scoop, portion the chocolate mixture and roll into balls using your hands.
- Roll each truffle in cocoa powder until evenly coated, then transfer to a parchment-lined baking sheet.
- Refrigerate until set. Allow truffles to come to room temperature for 1 hour before serving for best texture.
