  • 1 cup cocoa powder – for dusting and coating the truffles

Instructions

  1. In a small saucepan, bring the heavy cream to a gentle simmer over medium-low heat.
  2. Pour the hot cream over the chopped chocolate in a bowl and cover with plastic wrap. Let it sit for 10 minutes to melt the chocolate.
  3. Add the vanilla extract and stir until smooth and glossy. Allow to cool at room temperature for 30–60 minutes.
  4. Using an electric mixer, beat the mixture at medium speed until thick and slightly lighter in color.
  5. If too soft to roll, spread in a shallow dish and refrigerate until firm but scoopable (about 1–2 hours).
  6. Using a melon baller or small scoop, portion the chocolate mixture and roll into balls using your hands.
  7. Roll each truffle in cocoa powder until evenly coated, then transfer to a parchment-lined baking sheet.
  8. Refrigerate until set. Allow truffles to come to room temperature for 1 hour before serving for best texture.
