These Triple Chocolate Cookies are soft, gooey, and loaded with white, milk, and dark chocolate chips. A rich, fudgy treat that’s quick to make, perfectly crinkly on top, and irresistibly chocolatey in every bite.

- 125g unsalted butter
- 100g light brown sugar
- 100g white granulated sugar
- 1 medium egg
- 1 tsp vanilla extract
- 25g cocoa powder
- 225g plain flour
- 1/2 tsp salt
- 1/2 tsp bicarbonate of soda
- 1/2 tsp baking powder
- 100g white chocolate chips
- 100g milk chocolate chips
- 100g dark chocolate chips
Instructions
- Preheat your oven to 180°C (160°C Fan) or 375°F and line two to four baking trays with parchment paper.
- In a large mixing bowl, beat together the butter, light brown sugar, and granulated sugar until light and fluffy.
- Add the vanilla extract and egg, mixing until fully combined.
- Sift in the cocoa powder, plain flour, baking powder, bicarbonate of soda, and salt. Mix until a thick dough forms.
- Fold in the white, milk, and dark chocolate chips evenly through the dough.
- Using a 5cm cookie scoop, portion the dough onto trays—six per tray to allow space for spreading.
- Bake for 10–12 minutes until the cookies are crinkled and set at the edges but still soft in the center.
- Tap the tray lightly on the counter after baking to flatten the cookies slightly. Allow to cool on the tray before serving.
Notes
- Tap the tray after baking to help flatten domed cookies.
- For softer, gooier cookies, bake for 10 minutes; for crispier cookies, bake for 12 minutes.
- Store baked cookies in an airtight container for up to 5 days.
- Freeze raw cookie dough for up to 3 months and bake straight from frozen, adding 1–2 minutes to baking time.
- Use quality cocoa and chocolate chips for the best flavor.
