Description

These Triple Chocolate Cookies are soft, gooey, and loaded with white, milk, and dark chocolate chips. A rich, fudgy treat that’s quick to make, perfectly crinkly on top, and irresistibly chocolatey in every bite.


Ingredients

  • 125g unsalted butter
  • 100g light brown sugar
  • 100g white granulated sugar
  • 1 medium egg
  • 1 tsp vanilla extract
  • 25g cocoa powder
  • 225g plain flour
  • 1/2 tsp salt
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp baking powder
  • 100g white chocolate chips
  • 100g milk chocolate chips
  • 100g dark chocolate chips

Instructions

  1. Preheat your oven to 180°C (160°C Fan) or 375°F and line two to four baking trays with parchment paper.
  2. In a large mixing bowl, beat together the butter, light brown sugar, and granulated sugar until light and fluffy.
  3. Add the vanilla extract and egg, mixing until fully combined.
  4. Sift in the cocoa powder, plain flour, baking powder, bicarbonate of soda, and salt. Mix until a thick dough forms.
  5. Fold in the white, milk, and dark chocolate chips evenly through the dough.
  6. Using a 5cm cookie scoop, portion the dough onto trays—six per tray to allow space for spreading.
  7. Bake for 10–12 minutes until the cookies are crinkled and set at the edges but still soft in the center.
  8. Tap the tray lightly on the counter after baking to flatten the cookies slightly. Allow to cool on the tray before serving.

Notes

  • Tap the tray after baking to help flatten domed cookies.
  • For softer, gooier cookies, bake for 10 minutes; for crispier cookies, bake for 12 minutes.
  • Store baked cookies in an airtight container for up to 5 days.
  • Freeze raw cookie dough for up to 3 months and bake straight from frozen, adding 1–2 minutes to baking time.
  • Use quality cocoa and chocolate chips for the best flavor.
